The physiological stage of mango maturity at harvest affects fruit quality the time it is commercialized. objective assessment remains a challenge because multiple interactions between visual aspect, physicochemical composition, and morphology fruit. This study aims to quantify optimal date guarantee cv. ‘Kent’. In this study, which took place in Korhogo northern Côte d’Ivoire, fruits were measured on 240 Kent mangoes harvested four different dates (90, 95, 100, 105 days after flowering).
